Diego Badaro is a great connoisseur of chocolate – the man from Bahia has even been the subject of an article in The New Yorker and of several articles in publications specializing in gastronomy. All because of the chocolate Amma, which he began manufacturing in 2010 in partnership with friend and American chocolatier Frederick Schilling.
* Badaro, who is married to Luiza Olivetto, will take a break from his farm in Itacare in southern Bahia, to talk about the process of production of chocolate, from cocoa cultivation to the final product.
